블러드 오렌지 티 케익

공정

케익 반죽

  • Whip the Gourmet butter with the caster sugar. Gradually pour the whole eggs in.
    Add the flour, ground almond and cornstarch all sieved together.
    Pour the Blood orange puree Ravifruit and add the candied orange cubes in.
    Stir the batter well and spread into three buttered teacake moulds.
    Bake at 155℃ for about 30minutes.
    Remove from the mould and soak with the Campari syrup over a cooling rack.

시럽

  • Thaw the Blood orange puree Ravifruit between 5℃ and 10℃.
    Process all the ingredients together and churn.

블러드 오렌지 아이싱

  • Mix together the icing sugar, Blood orange puree Ravifruit and Campair liquor,
    heat at 90℃ and glaze instantly.

Assembly

  • Leave to cool and glaze the cake with the Campari water icing.
