Strawberry jam
- Pectin  3.2g
- sugar  31g
- strawberry  110g
- trehalos  66g
- water  80g
- STRAWBERRY RESIN  1.2g
Cooking process
Cake sheet
- 1.Whisk egg+egg white with sugar, trehalos at 36~38 degree to the full peak.
2. Add strawberry resin and then sieved wheat flour
3. Add sunflower oil and place the parchment paper on the pan and spread the batter on the pan.
4. Place the empty pan on the knee and bake 180 degree for 15 min. Damper close
Strawberry jam
- 1. Blend pectin+ sugar
2. Boil strawberry + trehlaos,water + pectin blend
3. Stop heating and add Resin
Strawberry cream
- -Whisk DB whipping cream and blend with ripple jam
-Spread on the cake sheet and roll and set in the chiller
