- WAXY BREAD KC  640g
- SOFT NO.3 ( Pregelatinized modified Waxy maize starch)  140g
- Waxy Rice powder  100g
- Salt  13g
- Sugar  70g
- Skimmed Milk powder  25g
- Baking Powder EP ( Odorless)  8g
- Butter  200g
- Sunflower oil  100g
- Egg  160g
- Water  420g
Coating
- DRY FONDANT ( Donut Glaze)  500g
- Boiled water  125g
Cooking process
Recipe
- 1) Mixing
-Blend the powdered ingredients for 2 min low speed
-Add butter and mix 5 min at low speed
-Add water L1M3
2) Resting: 10 min and then dividing
3)Molding& Frying
-Flaten the dough by rolling pin ( 1.5~ 2Cm) and cut as the desired shape and Fry at 180 degree
4) Coating by dry fondant mixture
Coating
- Whisk immediatly after mixing. It can be used till around 45 degree.
If he mixture get thicker and then heat again for the use.
