Mixing ratio

- Sunflower oil  10g
- Shallot  30g
- Crushed Garlic  1ea
- Dried Tomato  40g
- Arborio Rice (cooked)  125g
- White wine  30g
- Chicken Stock( 2%)  150g
- heavy cream  20g
- Grana cheese stick without Skin  10g
- IQF BASIL M-6MM (250G)  1g
- Burrata fresh 125g  1ea
- Cold infused Basil Oil  10g
- Salt  desired
- Pepper  desired
Cooking process
recipe
- 1. Saute shallot with sunflower oil
2. When shallot turns into brown color and then add garlic, tomato
3. Add the cooked Arbrio rice and deglaze white wine
4. Simmer with chicken stock
5. When the liquid is reduced and then add heavy cream, grana cheese
6. Mix with basil and plating
7. Place the warmed Burrata and sprinkle Basil oil on top of Burrata
