AS stands for Acid Stable. Everwhip AS is Acid stable Non Dairy Cream
IT can be blended with Acidic ingrediens such as fruit puree, Yogurt, Jam
Most suitable to make Mousse as the yields is 3 times bigger than Dairy cream
(IT can be whipped 100% but Dairy cream whip 60~71% in mousse)

Caution: If you use it alone, the cream is collapsed after a day. And it must be blended with Acidic ingredients.
